A delicious twist on the classic Zuppa Toscana Soup using turkey bacon for a healthier option.

Ingredients

  • 1 tablespoon olive oil
  • 6 slices turkey bacon, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 large potatoes, diced
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add diced onion and minced garlic, sauté until softened.
  3. Pour in chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in the chopped kale and cook until wilted.
  5. Pour in heavy cream and Italian seasoning, stir to combine. Season with salt and pepper.
