- 1 can black beans, drained and rinsed
- 2 ripe avocados, sliced
- 1 cup shredded vegan cheese
- 4 large whole wheat tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- In a bowl, mash the avocados and mix in the cumin, chili powder, salt, and pepper.
- Spread black beans over half of each tortilla.
- Add the mashed avocado mixture on top of the black beans.
- Sprinkle vegan cheese over the avocado.
- Fold the tortillas in half and heat olive oil in a skillet over medium heat.
- Cook each quesadilla for 3-4 minutes on each side until golden brown.
- Cut into wedges and serve warm.
