Vegan Quesadillas with Black Beans and Avocado

A delicious and easy recipe for vegan quesadillas made with black beans and avocado.

Ingredients

  • 1 can black beans, drained and rinsed
  • 2 ripe avocados, sliced
  • 1 cup shredded vegan cheese
  • 4 large whole wheat tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a bowl, mash the avocados and mix in the cumin, chili powder, salt, and pepper.
  2. Spread black beans over half of each tortilla.
  3. Add the mashed avocado mixture on top of the black beans.
  4. Sprinkle vegan cheese over the avocado.
  5. Fold the tortillas in half and heat olive oil in a skillet over medium heat.
  6. Cook each quesadilla for 3-4 minutes on each side until golden brown.
  7. Cut into wedges and serve warm.

Notes

  • Serve with salsa or guacamole for added flavor.
  • Feel free to add your favorite vegetables.
