8 ounces penne pasta
2 tablespoons olive oil
1 zucchini, diced
1 bell pepper, diced
1 cup cherry tomatoes, halved
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded mozzarella cheese
Instructions
Preheat your oven to 375°F (190°C).
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add in the zucchini, bell pepper, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender.
Stir in the garlic, oregano, basil, salt, and pepper. Cook for another minute.
Combine the cooked pasta with the vegetable mixture.
Transfer the mixture to a baking dish and sprinkle with mozzarella cheese on top.
Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
