  • 4 chicken thighs bone-in, skin-on
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 4 cups mixed greens
  • 1 cup shredded carrots
  • 1/2 cup sliced apples
  • 1/4 cup walnuts
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken thighs with salt and pepper, then sear in skillet until browned.
  4. Transfer chicken to a baking dish, pour apple cider over the chicken, and sprinkle with thyme.
  5. Bake for 30-35 minutes until cooked through.
  6. Meanwhile, in a large bowl, combine mixed greens, carrots, apples, and walnuts.
  7. In a small bowl, whisk together apple cider vinegar and honey, then pour over the slaw mixture and toss to combine.
