  • 3 pounds beef chuck roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
  4. Add garlic, onion, carrots, and celery to the pot. Sauté for 5 minutes.
  5. Stir in cranberry juice, balsamic vinegar, brown sugar, and bay leaves.
  6. Cover and transfer to the oven. Braise for 3 to 4 hours until the meat is tender.
  7. Remove the roast and let rest before slicing. Serve with the glaze from the pot.
