- 3 pounds beef chuck roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Preheat the oven to 325°F (163°C).
- Season the beef roast with salt and pepper.
- In a large oven-safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned.
- Add garlic, onion, carrots, and celery to the pot. Sauté for 5 minutes.
- Stir in cranberry juice, balsamic vinegar, brown sugar, and bay leaves.
- Cover and transfer to the oven. Braise for 3 to 4 hours until the meat is tender.
- Remove the roast and let rest before slicing. Serve with the glaze from the pot.
