  • 2 pounds boneless, skinless chicken thighs
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Place chicken thighs in the slow cooker.
  2. Add cherry tomatoes, Kalamata olives, olive oil, red wine vinegar, garlic, oregano, salt, and black pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or high for 4 hours.
  4. Before serving, sprinkle with crumbled feta cheese.
