  • 2 cups sliced mushrooms
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon thyme
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until softened.
  3. Stir in the mushrooms and cook until they are golden brown.
  4. Add the shredded rotisserie chicken and thyme, mixing well.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and stir in the heavy cream, cooking for an additional 5 minutes.
