A warm and hearty red lentil soup, perfect for those cozy nights when you need comfort food.

Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery. Sauté until softened.
  3. Stir in the red lentils, vegetable broth, cumin, and paprika.
  4. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until the lentils are tender.
  5. Blend with an immersion blender until smooth.
  6. Stir in the lemon juice, salt, and pepper to taste.
  7. Serve warm.
