Instructions

  1. Preheat the oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg; set aside.
  3. In a separate bowl, beat eggs and sugar until light and fluffy, then mix in pumpkin and vanilla.
  4. Gradually add dry ingredients, stirring until just combined.
  5. Spread the batter evenly in the prepared pan and bake for 15-20 minutes, until done.
  6. While the cake bakes, prepare a clean kitchen towel sprinkled with powdered sugar.
  7. Once baked, invert the cake onto the towel and roll it up tightly, allowing it to cool.
  8. For the filling, beat together cream cheese, butter, vanilla, and powdered sugar until smooth.
  9. Once the cake is cool, unroll it, spread with filling, and re-roll it gently.
  10. Refrigerate for at least 1 hour before slicing.
