  • 1 pound turkey bacon
  • 1 can kidney beans
  • 1 can black beans
  • 1 can pumpkin puree
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onion and garlic to the pot, sauté until soft.
  3. Stir in beans, pumpkin, diced tomatoes, broth, and spices.
  4. Bring to a simmer and cook for 20 minutes.
  5. Add crumbled bacon back to the pot before serving.
