Ingredients

  • 6 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup dumpling wrappers
  • 1 cup mushrooms, sliced
  • 2 cups bok choy, chopped
  • 2 green onions, sliced
  • 1 tablespoon soy sauce

Instructions

  1. In a large pot, cook the turkey bacon until crisp, then set aside.
  2. Add olive oil, onion, and garlic to the pot and sauté until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Add dumpling wrappers and mushrooms, simmer for about 5 minutes.
  5. Stir in bok choy, green onions, and soy sauce, cooking for an additional 3 minutes.
  6. Chop the turkey bacon and top the soup before serving.
