Ingredients

  • 1 cup chickpeas
  • 1 cup lentils
  • 1 cup fresh herbs (parsley, cilantro, and dill)
  • 1 package reshteh (Persian noodles)
  • 1 large onion, diced
  • 5 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 tablespoon turmeric
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add chickpeas, lentils, and broth. Bring to a boil and simmer.
  3. Stir in herbs, turmeric, salt, and pepper.
  4. Add reshteh and cook until noodles are tender.
  5. Serve hot, garnished with additional herbs.
