- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (15 ounces) white beans, drained and rinsed
- 1 cup gluten-free lasagna noodles, broken
- 1 teaspoon Italian seasoning
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
