A delicious and easy-to-make one pot gluten free white chicken lasagna soup that everyone will love.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 cup gluten-free lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
  2. Add chicken breasts and cook until browned on all sides.
  3. Pour in chicken broth and bring to a boil.
  4. Add white beans, broken lasagna noodles, and Italian seasoning. Reduce heat and simmer until noodles are tender.
  5. Stir in ricotta, mozzarella, and Parmesan cheese until melted and creamy.
  6. Add spinach and cook until wilted. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional cheese if desired.

Notes

  • For added flavor, consider using homemade chicken broth.
