Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Remove bacon and set aside, then add onion, bell pepper, and garlic to the pot. Sauté until soft.
  3. Stir in diced tomatoes, cumin, chili powder, and chicken broth. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in lime juice and crumble the turkey bacon on top before serving.
