  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, mix the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Combine the wet and dry ingredients until just mixed, then fold in the turkey bacon and cheese.
  5. Fill each muffin tin cup about 2/3 full with the batter.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Allow to cool slightly before removing from the tin. Serve warm.
