Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add the dry ingredients to the creamed mixture, alternating with buttermilk, beginning and ending with the flour mixture.
  8. Divide the batter evenly between the prepared pans.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.

Notes

  • This cake can be dressed up with frosting or served plain with a dusting of powdered sugar.
  • For extra flavor, consider adding lemon or almond extract.
