- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup spinach, chopped
- Salt and pepper to taste
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add carrots and celery, cook for 5 minutes.
- Stir in oregano and thyme, cook for an additional minute.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken and chickpeas, reduce heat and simmer for 15 minutes.
- Stir in spinach and cook until wilted. Season with salt and pepper to taste.
- Serve hot and enjoy!
