A warm and comforting Mediterranean Chicken Soup recipe that is easy to make and full of flavor.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add carrots and celery, cook for 5 minutes.
  3. Stir in oregano and thyme, cook for an additional minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the shredded chicken and chickpeas, reduce heat and simmer for 15 minutes.
  6. Stir in spinach and cook until wilted. Season with salt and pepper to taste.
  7. Serve hot and enjoy!

Notes

  • This soup can be made ahead of time and reheats well.
  • Feel free to add other vegetables you have on hand.
