1 pound chicken breast, diced
4 cups chicken broth
1 cup carrots, sliced
1 cup celery, chopped
1 onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 cup heavy cream
2 cups spinach, fresh
Salt and pepper to taste
Instructions
In a large pot, sauté the onions and garlic until translucent.
Add the diced chicken and cook until it’s no longer pink.
Add the carrots, celery, and chicken broth; bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Stir in the thyme, oregano, and heavy cream.
Add the spinach and let it cook for an additional 5 minutes.
Season with salt and pepper before serving.

For a thicker soup, add more cream or a cornstarch slurry.
