Ingredients

  • 2 chicken breasts
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix the Dijon mustard and maple syrup.
  3. Coat the chicken breasts with the maple Dijon sauce.
  4. Peel and cube the sweet potatoes, tossing them in olive oil, salt, and pepper.
