A hearty and comforting lentil soup featuring turkey bacon, perfect for any occasion.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crisp. Remove and chop.
  2. Add olive oil, onion, carrots, and celery to the pot. Sauté until softened.
  3. Add garlic and cook for another minute.
  4. Stir in the lentils, vegetable broth, thyme, and bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  6. Season with salt and pepper, and add the chopped turkey bacon back into the soup.
  7. Serve hot.

Notes

  • For a thicker soup, blend a portion of the soup and mix it back in.
  • Feel free to add more vegetables or spices to taste.
