  • 4 strips turkey bacon
  • 2 cups chicken ham, diced
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 1 can diced tomatoes
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the chopped onion and bell pepper to the pot, sauté until softened.
  3. Stir in the chicken ham and cook for another 2 minutes.
  4. Add the rice, chicken broth, paprika, cayenne, thyme, and diced tomatoes.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
  6. Once cooked, fluff with a fork and mix in the crispy turkey bacon.
