A delicious and hearty Irish vegetarian stew featuring turkey bacon and chicken ham for a comforting meal.

Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped celery
  • 2 cups vegetable broth
  • 1 cup turkey bacon, diced
  • 1 cup chicken ham, diced
  • 1 can diced tomatoes
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy.
  2. Add the onions, carrots, celery, and potatoes. Sauté for 5-7 minutes.
  3. Pour in the vegetable broth and add the diced tomatoes, thyme, and rosemary.
  4. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  5. Season with salt and pepper before serving.

Notes
