A festive salad that combines fresh green beans with the tartness of cranberries, the creaminess of feta, and the crunch of walnuts.

Ingredients

  • 1 pound fresh green beans
  • 1 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Blanch the green beans in boiling water for 3-4 minutes until bright green and tender-crisp. Drain and cool in ice water.
  2. In a large bowl, combine the cooled green beans, feta cheese, cranberries, walnuts, and red onion.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • This salad can be prepared a few hours in advance; just add the dressing right before serving.
