Delicious and easy to make Ground Beef Enchiladas that will satisfy your comfort food cravings.

Ingredients

  • 1 pound ground beef
  • 1 cup onion, chopped
  • 1 can enchilada sauce
  • 2 cups shredded cheese
  • 8 flour tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, brown the ground beef and onion over medium heat until cooked through.
  3. Stir in the garlic powder, cumin, and salt.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll up.
  6. Place the rolled tortillas seam side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  8. Bake for 20 minutes until the cheese is melted and bubbly.

Notes

  • For extra spice, add chopped jalapeños to the beef mixture.
  • These enchiladas freeze well for up to 3 months.
