Ingredients

  • 4 strips turkey bacon
  • 1 cup onions, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon oregano
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup kale, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crispy. Remove and crumble.
  2. Add onions and garlic to the pot, sauté until translucent.
  3. Stir in carrots and celery, and cook for 5 minutes.
  4. Add oregano, vegetable broth, and diced tomatoes; bring to a boil.
  5. Reduce heat, add kale, and simmer for 20 minutes.
  6. Season with salt, pepper, and lemon juice before serving.
  7. Top with crumbled turkey bacon.
