1 pound ground pork
1/2 cup breadcrumbs
1 egg
1/4 cup grated Parmesan cheese
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon salt
1 teaspoon black pepper
2 large sweet potatoes, peeled and cubed
1/4 cup milk
2 tablespoons butter
4 slices turkey bacon, cooked and chopped
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, combine ground pork, breadcrumbs, egg, Parmesan cheese, green onions, garlic, salt, and pepper. Mix until well combined.
Shape the mixture into meatballs and place on a baking sheet.
Bake for 25 minutes or until cooked through.
Meanwhile, boil sweet potatoes in a pot of salted water until tender, about 15 minutes.
Drain and mash sweet potatoes with milk and butter until smooth.
Serve the meatballs over the sweet potato mash and top with turkey bacon.
