These Easy Thai Baked Chicken Meatballs are juicy and flavorful, perfect for a weeknight dinner.

Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon red curry paste
  • 1 egg
  • 1 tablespoon lime juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, ginger, soy sauce, fish sauce, cilantro, curry paste, egg, and lime juice.
  3. Mix until well combined.
  4. Form the mixture into meatballs and place them on a baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, or until cooked through.
  6. Serve with your favorite dipping sauce.

Notes

  • For a spicier version, add more red curry paste.
