Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the onion and garlic, cooking until soft.
  3. Stir in the shrimp and cook until pink.
  4. Add the spices and mixed vegetables, stirring well.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the rice, cover, and reduce heat to simmer for about 20 minutes.
  7. Remove from heat, add lemon juice, and fluff with a fork before serving.
