This easy ground beef zucchini casserole is a perfect family dinner that is hearty and comforting.

  • 1 pound ground beef
  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese
  • 2 cups cooked rice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet; sauté until onions are translucent.
  4. Stir in the sliced zucchinis, diced tomatoes, Italian seasoning, salt, and pepper. Cook until zucchinis are tender.
  5. Mix in the cooked rice and half of the cheese, combining thoroughly.
  6. Transfer the mixture to a baking dish, sprinkle the remaining cheese on top.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
