A simple and delicious chicken burrito casserole that the whole family will enjoy.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup salsa
  • 2 cups rice, cooked
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, salsa, rice, half of the cheese, cumin, chili powder, and garlic powder.
  3. Transfer the mixture to a greased baking dish.
  4. Top with the remaining cheese.
  5. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  6. Let cool for a few minutes before serving.

Notes

  • Feel free to add your favorite vegetables.
  • Can be assembled ahead of time and stored in the fridge before baking.
