- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or fresh
- 1 cup salsa
- 2 cups rice, cooked
- 1 cup cheddar cheese, shredded
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, salsa, rice, half of the cheese, cumin, chili powder, and garlic powder.
- Transfer the mixture to a greased baking dish.
- Top with the remaining cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
