- 1 pound carrots, peeled and sliced
- 1 pound Brussel sprouts, trimmed and halved
- 4 ounces turkey bacon, chopped
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the carrots and Brussel sprouts with olive oil, salt, pepper, and thyme. Toss well to coat.
- Spread the vegetables on a baking sheet in a single layer.
- Scatter the chopped turkey bacon over the top.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Drizzle the maple syrup over the vegetables and return to the oven for an additional 5 minutes.
- Remove from the oven and serve warm.

- For a vegetarian option, omit turkey bacon and add more vegetables.
