A delicious side dish featuring crispy maple glazed vegetables paired with turkey bacon for added flavor.

Ingredients

  • 1 pound carrots, peeled and sliced
  • 1 pound Brussel sprouts, trimmed and halved
  • 4 ounces turkey bacon, chopped
  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the carrots and Brussel sprouts with olive oil, salt, pepper, and thyme. Toss well to coat.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Scatter the chopped turkey bacon over the top.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
  6. Drizzle the maple syrup over the vegetables and return to the oven for an additional 5 minutes.
  7. Remove from the oven and serve warm.

Notes

  • For a vegetarian option, omit turkey bacon and add more vegetables.
  • You can substitute honey for maple syrup if preferred.
