- 1 pound salmon fillet, skinless and diced
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, combine the flour, salt, pepper, garlic powder, and onion powder.
- In another bowl, beat the eggs.
- In a third bowl, place the panko breadcrumbs.
- Dip each salmon piece first into the flour mixture, then into the beaten eggs, and finally coat with panko breadcrumbs.
- Place the coated salmon bites on the baking sheet and bake for 15-20 minutes until golden brown.
- While the salmon bites are baking, mix together the mayonnaise, sriracha, and honey to create the bang bang sauce.
- Serve the crispy salmon bites with the sauce on the side for dipping.
