A rich and creamy pasta dish with slow roasted tomatoes and crispy turkey bacon.

  • 12 ounces pasta of choice
  • 6 slices turkey bacon
  • 2 cups cherry tomatoes
  • 1 cup heavy cream
  • 1 cup spinach
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place cherry tomatoes on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes.
  3. Cook turkey bacon in a skillet until crispy, then chop it into pieces.
  4. In a pot, cook the pasta according to package instructions. Drain and set aside.
  5. In the same pot, add heavy cream, spinach, garlic powder, Italian seasoning, and cooked pasta. Stir to combine.
  6. Add roasted tomatoes and crispy turkey bacon. Toss gently to mix.
  7. Serve warm, garnishing with extra bacon if desired.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • This dish can be made with gluten-free pasta.
