  • 8 ounces turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1 package (9 ounces) ravioli, fresh or frozen
  • 1 cup heavy cream
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, add olive oil and sauté onions until translucent.
  3. Add garlic and cook until fragrant.
  4. Pour in chicken broth and add diced tomatoes and Italian seasoning. Bring to a boil.
  5. Add the ravioli and cook according to package instructions.
  6. Reduce heat and stir in the cream, chopped bacon, spinach, and Parmesan cheese until spinach wilts.
  7. Serve hot with extra cheese on top if desired.
