Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 4 cups fish stock
  • 1 cup heavy cream
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onion and garlic, and sauté until translucent.
  3. Add potatoes and thyme, cooking for about 5 minutes.
  4. Pour in fish stock and bring to a boil. Reduce heat and simmer until potatoes are tender.
  5. Add shrimp and scallops, cooking for another 5 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Serve hot, garnished with fresh herbs.

Notes

  • For a thicker chowder, you can blend a portion of the potatoes.
  • Feel free to add more seafood varieties as desired.
