  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup sour cream
  • 1/4 cup brewed coffee, cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese until smooth.
  4. Add powdered sugar, sour cream, cooled coffee, eggs, and vanilla extract. Mix until well combined.
  5. Pour the cream cheese mixture over the crust.
  6. Bake for 50-60 minutes, until the center is set.
  7. Let cool, then refrigerate for at least 4 hours before serving.
