2 cups all-purpose flour
1 cup unsalted butter, softened
3/4 cup powdered sugar
1/2 cup dried cranberries, chopped
1 tsp vanilla extract
1/4 tsp salt
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, cream the softened butter and powdered sugar until fluffy.
Add in the vanilla extract and salt, mixing until combined.
Slowly incorporate the flour and then the chopped cranberries.
Form the dough into a log and wrap in plastic wrap. Chill for about an hour.
Slice the log into 1/4 inch thick rounds and place on a baking sheet lined with parchment paper.
Bake for 12-15 minutes until the edges are lightly golden.
Let the cookies cool on a wire rack before serving.
