- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a bowl, combine the cranberries and 1/2 cup of sugar, set aside.
- In another bowl, mix the flour, oats, remaining sugar, baking soda, and salt.
- Add the softened butter and vanilla extract to the dry ingredients, and mix until crumbly.
- Press half of the mixture into the bottom of the prepared baking dish.
- Spread the cranberry mixture evenly on top, then crumble the remaining oat mixture over the cranberries.
- Bake for 25-30 minutes or until golden brown.
