  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, combine the cranberries and 1/2 cup of sugar, set aside.
  3. In another bowl, mix the flour, oats, remaining sugar, baking soda, and salt.
  4. Add the softened butter and vanilla extract to the dry ingredients, and mix until crumbly.
  5. Press half of the mixture into the bottom of the prepared baking dish.
  6. Spread the cranberry mixture evenly on top, then crumble the remaining oat mixture over the cranberries.
  7. Bake for 25-30 minutes or until golden brown.
  8. Allow to cool before cutting into bars.

Notes

  • These bars can be served warm or cold.
