A rich and creamy potato soup topped with turkey bacon and loaded with your favorite toppings for a comforting meal.

Ingredients

  • 4 large russet potatoes
  • 1/2 cup turkey bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Peel and dice the potatoes.
  2. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  3. In the same pot, add onion and garlic; sauté until translucent.
  4. Add the diced potatoes and chicken broth. Bring to a boil and cook until potatoes are tender.
  5. Reduce heat and stir in heavy cream, cheese, sour cream, and season with salt and pepper.
  6. Blend the soup until smooth using an immersion blender.
  7. Serve topped with crispy turkey bacon and green onions.

Notes

  • For extra flavor, add a pinch of paprika.
  • Garnish with more cheese if desired.
