A vibrant and fresh pasta salad featuring halloumi cheese, perfect for warm days.

Ingredients

  • 200 grams pasta
  • 150 grams halloumi cheese
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ cup bell peppers
  • ¼ cup red onion
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • salt to taste
  • pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. Meanwhile, cube the halloumi and pan-fry until golden.
  3. Chop the vegetables and combine them in a large bowl.
  4. Add the cooled pasta and fried halloumi to the bowl.
  5. Drizzle with olive oil and lemon juice, then season with salt and pepper.
  6. Toss gently to combine and serve immediately or chill in the fridge.
