  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh raspberries
  • 1 egg, separated
  • 1 tablespoon gelatin powder
  • 3 tablespoons cold water

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press into the bottom of the pan.
  3. Melt dark chocolate in a double boiler or microwave, stirring until smooth.
  4. In a mixing bowl, whip heavy cream until soft peaks form, then gradually add sugar.
  5. Fold melted chocolate into whipped cream until fully combined.
  6. In a small bowl, dissolve gelatin in cold water and let sit for 5 minutes. Heat until melted and stir into the chocolate mixture.
  7. Gently fold in raspberries and the egg white. Pour the mixture over the crust in the pan.
  8. Chill in the fridge for at least 4 hours until set.
  9. Remove from the springform pan and decorate with fresh raspberries before serving.

  • For a richer taste, use high-quality dark chocolate.
  • Feel free to add whipped cream on top when serving.
