- 1 ½ cups chocolate cookie crumbs
- ½ cup unsalted butter, melted
- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 ½ cups fresh raspberries
- 1 egg, separated
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press into the bottom of the pan.
- Melt dark chocolate in a double boiler or microwave, stirring until smooth.
- In a mixing bowl, whip heavy cream until soft peaks form, then gradually add sugar.
- Fold melted chocolate into whipped cream until fully combined.
- In a small bowl, dissolve gelatin in cold water and let sit for 5 minutes. Heat until melted and stir into the chocolate mixture.
- Gently fold in raspberries and the egg white. Pour the mixture over the crust in the pan.
- Chill in the fridge for at least 4 hours until set.
- Remove from the springform pan and decorate with fresh raspberries before serving.
