This Cauliflower and Chickpea Curry is a delicious and comforting dish that everyone can enjoy.

Ingredients

  • 1 head cauliflower, chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 can coconut milk
  • 1 bell pepper, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add curry powder and turmeric, stir for 1 minute.
  3. Add cauliflower, bell pepper, chickpeas, salt, and black pepper.
  4. Pour in coconut milk and vegetable broth, bring to a simmer.
  5. Cover and cook for 20 minutes or until cauliflower is tender.
  6. Adjust seasoning if needed and serve hot.
