- 2 cups butternut squash, peeled and diced
- 1 large onion, thinly sliced
- 1 cup gruyere cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme, dried
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast for 25-30 minutes until tender.
- While the squash is roasting, heat a skillet over medium heat and add olive oil.
