A delicious combination of caramelized onions and gruyere cheese blended with roasted squash for a perfect dish.

  • 2 cups butternut squash, peeled and diced
  • 1 large onion, thinly sliced
  • 1 cup gruyere cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme, dried

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet.
  3. Roast for 25-30 minutes until tender.
  4. While the squash is roasting, heat a skillet over medium heat and add olive oil.
  5. Add the sliced onions and cook, stirring frequently, until caramelized, about 15 minutes.
  6. Add thyme and stir well.
  7. Once the squash is done, combine it with the caramelized onions and mix in the gruyere cheese.
  8. Transfer to a baking dish and bake for an additional 10 minutes until cheese is melted and bubbly.

Notes

  • Serve warm as a side dish or a main vegetarian meal.
  • Can be made ahead and reheated.
