- 1 pound shrimp, peeled and deveined
- 2 tablespoons blackening seasoning
- 8 ounces egg noodles
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- ½ cup chicken broth
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- ¼ cup fresh parsley, chopped
- Cook the egg noodles according to package instructions; drain and set aside.
- In a bowl, toss shrimp with blackening seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Add shrimp and cook until blackened, about 2-3 minutes per side. Remove and set aside.
- Add onion and garlic to the same skillet; sauté until translucent.
- Add mushrooms; cook until soft.
- Stir in cream, Dijon mustard, chicken broth, and Worcestershire sauce; simmer until thickened.
- Return shrimp to the skillet; mix to combine.
- Serve over egg noodles topped with parsley.
