Ingredients

  • 1/4 cup white wine vinegar
  • 1/2 cup unsalted butter, cold and cubed
  • Salt to taste
  • White pepper to taste

Instructions

  1. In a saucepan, combine the white wine and vinegar. Bring to a boil over medium heat and reduce until it is about 2 tablespoons of liquid.
  2. Reduce heat to low and start whisking in the cold butter, a few cubes at a time, until the sauce is smooth and creamy.
  3. Season with salt and white pepper to taste.
