Baked Rigatoni Stuffed with Beef Ragu & Mozzarella is the perfect comfort food for cold nights. This hearty dish combines al dente rigatoni pasta with a rich beef ragu and melted mozzarella cheese, creating a cozy and satisfying meal for any occasion.

  • 12 ounces rigatoni pasta
  • 1 pound ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the rigatoni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  4. Add the onion and garlic to the skillet and sauté until onion is soft.
  5. Stir in the diced tomatoes, tomato sauce, and Italian seasoning. Simmer for 10 minutes.
  6. Combine the cooked rigatoni with the beef ragu mixture.
  7. Transfer half of the mixture to a baking dish, sprinkle with half of the mozzarella cheese, and then add the remaining rigatoni mixture on top.
  8. Top with the remaining mozzarella and Parmesan cheese.
  9. Bake in the preheated oven for 25-30 minutes or until cheese is bubbly and golden.

Notes

  • For a spicier version, add red pepper flakes to the ragu.
  • You can substitute ground turkey for a lighter option.
