A warm and comforting dish perfect for fall, combining savory sausage with sweet squash and pasta.

  • 2 cups butternut squash, diced
  • 8 ounces pasta of your choice
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned.
  2. Add onion and garlic, cooking until soft.
  3. Stir in squash and seasonings, then cover to cook until squash is tender.
  4. Meanwhile, cook pasta according to package instructions.
  5. Once pasta is cooked, add to the skillet along with spinach and toss to combine.
  6. Serve warm, garnished with parmesan if desired.
