  • 4 slices turkey bacon
  • 1 can crushed tomatoes
  • 2 cups vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon olive oil
  • ½ cup heavy cream

Instructions

  1. In a pot, heat olive oil over medium heat and add diced onion. Sauté until translucent.
  2. Add minced garlic and chopped turkey bacon; cook until the bacon is crispy.
  3. Stir in crushed tomatoes, vegetable broth, basil, sugar, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Use an immersion blender to purée the soup to your desired consistency.
  6. Stir in heavy cream and warm through before serving.
